Biscochitos

In 1989, the state of New Mexico adopted the biscochito as its official state cookie. This act made New Mexico the first state to have an official state cookie.

Ingredients

6 C flour

¼ t salt

3 t baking powder

1 C shortening

1½ C sugar

2 t anise seeds

2 eggs

¼ C milk

¼ C sugar

1 T cinnamon

Procedure

In medium bowl, sift flour with baking powder and salt. 

 

In large bowl, cream shortening and sugar with anise until fluffy, beat in eggs one at a time. 

Mix in flour and milk until well blended.

 

Turn dough out on a floured board and roll to ¼ to ½ inch thickness. Cut into shapes and dust with sugar and cinnamon.

 

Bake at 350°F for 10 minutes until brown. Rack cool. Store in air tight container.
