| Texas Chili |
| Favorite recipe of President Lyndon Johnson. From the book 'Texas Home Cooking' 1993 |
| Ingredients |
| 4 LB Ground Beef Chuck |
| 1 Large Onion, fine diced |
| 2 Cloves Garlic - mince |
| 1 t Oregano - fine |
| 2 T Chili Powder |
| 1 t Cumin - ground |
| Salt to taste |
| 2 to 6 Dash Hot Pepper Sauce |
| 2 C Water - hot |
| 1½ C Tomatoes - Crushed with juice |
| Procedure |
| Place the meat, onion, and garlic in a large, heavy frying pan or Dutch oven. |
| Cook over medium heat until the meat is lightly browned. |
| Add the oregano, chili powder, cumin, salt, and hot pepper sauce. |
| Pour in the water and tomatoes, and bring the chili to a boil. |
| Reduce heat to a simmer, and cook for one hour. Skim off any fat during the cooking. |
| Serve the chili hot. |
