Oatmeal Cookies / Safari Biscuits

The chocolate chip variation was the food staple during our many safaris throughout Southern Africa. Hundreds would be made before setting out and serve as breakfast when leaving camp at the crack of dawn. As a result, these are were often refereed to as Safari Biscuits.

Ingredients

1 cup butter

1 1/2 cups sugar

1 egg

1/4 cup water

1 t vanilla extract

1 1/2 cup all-purpose flour

1/2 t baking soda

1/2 t cinnamon

1/4 t nutmeg

3 cups quick cooking oats


Chocolate Oatmeal

1 (6 oz) pack chocolate chips


Raisin Oatmeal

1 cup raisins, chopped


Peanut Butter Oatmeal

1 cup peanut butter morsels


Coconut Oatmeal

1 cup coconut is substituted for 1 cup oats

Procedure

Cream butter, add sugar, add egg, beat well.

Add water and vanilla, add flour, cinnamon, nutmeg and soda, mix well. 

Stir in oats and other combination ingredients. 

Drop dough by rounded teaspoons onto cookie sheet, bake at 350°F for 10 - 12 minutes or until lightly browned.

Yield: about 8 dozen.
